
All you need is:
🔸1 gratded carrot
🔸1 cup of millet cooked in coconut milk
🔸1/2 cup of coconut/ any nut flour
🔸1/2 cup of dried apricots, raisins, cramberries soaked i hot water for about 1/2 hour
🔸1/3 cup of desiccated coconut 🔸1/2 cup of nuts/seeds (I recomend sunflower seeds) 🔸2 tbs of nut butter/ coconut oil
🔸1/3 cup of poppy seeds
Mix all ingredients in a food procesor (to be honest you can grate your carrot also in a food procesor, but separately )
Add more coconut flour (if the mixture is toothin to get the dough texture). Make balls from your dough and put in the fridge for about 1 hour. Now your carrot cake bites are ready! You can eat them straight or feeze them and eat as ice cream bites when ever you want!
